Santa Elisabetta 2018
This is our second single vineyard wine. Teran from Santa Elisabetta vineyard regularly yields healthy grapes of optimum ripeness. In the best years, it undergoes yield reduction through green harvesting, as well as further selection right before the harvest, and the final selection during the harvest. The result is balanced grapes of the highest quality, with an ideal ratio of freshness and ripeness. Later in the cellar we monitor the development of the wine in neutral wooden barrels, and with the help of friends, sommeliers and wine experts, make the final selection of the best barrels and create the final blend.

The year 2018 was specific and required a lot of attention and activity in the vineyards throughout the growing season, however, for the terrain on good elevated positions on the slopes and poorer and well-drained soil such as Santa Elisabetta, it was very favorable. It is characterized by a slightly later start of the vegetation process, high plant vigor and late ripening. Plenty of early rain in February and March, followed by a dry and warm April encouraged rapid and vigorous growth, while rainy May and June and typically warm July and August allowed high yields. Fortunately, the dry and warm harvest period, i.e. the whole of September and the first half of October, enabled a healthy harvest. Green harvesting and reducing the yield on the field were rigorous and essential to achieve balance and high quality in the end. The harvest was done in mid-October.
Description:
Dark and opaque ruby reds with violet reflections. An exceptionally layered and rich aroma with a cherry-spicy character. Dried cherries, cherry cake, tobacco leaf, baked cherries and ripe blackberries, a touch of herbal aromas and nuances of spicy notes are the aromas that characterize the fragrance. In the mouth, the first impression is intense and lively sweetness, followed by fullness and depth. Generous teranic acids balance the massiveness of the body and the warmth of the alcohol. The middle is characterized by strength and firm and ripe tannins, and the finish is full of ripe fruit on the aftertaste. The taste is extremely persistent, lively, rich, with the potential for many years of preservation. Ventilate in the decanter an hour before consumption.
Gastronomic recommendation:
With black Angus beefsteak, dry aged rib-eye, and other aged cuts of red meat, also hard, salty and aged cow’s and sheep’s cheese.
